Turns out database backups are NOT trivial

https://stack.convex.dev/database-backups-are-not-trivial(stack.convex.dev)
Backing up a live database by simply paginating through tables can result in an inconsistent snapshot, creating a view of data that never actually existed at a single point in time. This issue arises because data can be modified between the reads of different pages, especially in large, active databases. A more sound approach is to paginate over the underlying journal of updates, often known as a write-ahead log. This log tracks every change with a monotonically increasing timestamp, such as a hybrid logical clock, allowing for a consistent and accurate backup even while the database is being modified.
